If custard, chicken breast, etc. milk desserts are to be preserved along with the age cake, static (honeycomb) cooling system should be preferred because the blown cooling system can cause problems such as dimming in milk desserts.
-If the length of the pastry aisle will be longer than 3 meters, it is required to install the cooling group anywhere outside the cake display case. The fact that the short cake display case (since it will be under the engine) is wheeled will give you an advantage in terms of both location change and cleaning.
-LED lighting gives less heat and better exposure compared to fluorescent. For this reason, it is recommended that you prefer LED illuminated cake display case instead of fluorescent.
-Make sure that your cake display case has a digital temperature indicator.
